Founder & Chairman of the Board Bill and Orly Whitaker are the embodiment of all three. Bill has been part of the restaurant industry since 1958 working in Ohio, Indiana, West Virginia and Florida. After working at Chili’s as a General Manager, Bill conceived, designed and built a new restaurant called Crispers. The popularity of the concept enabled it to grow to twenty eight units with Average Unit Volume reaching $1,600.000. Publix Grocery Stores offered to buy the chain and the deal was consummated in 2004. Bill's entrepreneurial spirit continued to be piqued by his travels with wife Orly. Orly, a former night club and restaurant owner herself, introduced Bill to the European cafe culture during a trip to her home country of France, and the vision of Press 101™ began to take shape. Bill's experience with creating a concept and refining it into a thriving business combined with Orly's study and practice of interior design has allowed them to craft the simple yet upscale neighborhood favorite that is Press 101™. The Whitaker's expertise in seeking out the right resources to fine tune their menu concepts and craft a well balanced wine list have made Bill's vision a tangible reality.
